Young ginger is ONLY available from June - October. When harvested this young, it has no outer skin and appears white & pink.

Young ginger is highly used because the flesh is tender with very little fiber.  It is edible in a variety of ways. Japanese consume a lot of young ginger in the pickled form with sushi and sashimi.
